I am addicted to this. It’s tasty, easy to make and good for us. As I don’t always tolerate fried foods that well I steam the veggies. We all know fresh tastes better, but I usually have a few bags of frozen organic mixed vegetables in the freezer.
When steaming, I place about a quarter cup of filtered water in the bottom of the pan and cook under medium heat. If you do it a few times you’ll get the feel for how much and how long. I like my veggies crispy.
While the veggies are steaming I make a paste out of coconut oil (organic of course) and curry powder in the bottom of my favorite bowl. Then I drop the steamed veggies in the bowl and stir in the paste that melts all over them. As I want lots of coconut oil in my diet I tend to go heavy on it, maybe two to three tablespoons per bowl. The beauty of this recipe is you make it how you like. More or less coconut oil, more or less curry. I have been putting in about a tablespoon and a half of curry.
The curry I use is a mix of: turmeric, paprika, fenugreek, coriander, black pepper, cumin, ginger, celery seed, cloves, caraway and cayenne.
